I’ve been binge listening to DeliciousElla podcast during my morning runs. There was an episode about gut health that got me interested. It says we need to consume 30+ type of plant source of food per week to have a diverse healthy gut. I wonder how many do I consume. So I think I’ll challenge myself to eat as varied food as possible for a week and record them to see if I can hit 30.
Yesterday I took day off from work and had a slow morning. While cooking lunch, I made breakfast waffle for the family.
We got fresh vegetable delivered on Wednesday so I had a large salad as part of lunch
with carrot ginger dressing. last time I made using fresh ginger but run out yesterday and used powder and it was not as good
a while after lunch I felt I need something more substantial, so had few of these pancakes with almond butter
had watermelon for snack and dinner was two parts. Part 1 was stir fry rice with mixed vegetables and tofu with tons of nutritional yeast and black pepper.
part 2 was baked pumpkin with cinnamon
after dinner, daddy make crab apple just for fun
Type of whole food consumed
zucchini
pumpkin
oat
almond butter
quinoa
lettuce
tomato
cucumber
purple cabbage
carrot
tofu
coconut flour (in pancake)
avocado
green pea
corn
cauliflower
brown rice
watermelon
wooo! 18 already! While a lot of these are my staples, I think hitting 30 won’t be too hard for a week challenge. Can’t wait to try new food tomorrow.
I have always loved traveling and travel often for work. But 2.5 years ago we moved to Manila and started to travel more for leisure. It was the start of our journey to explore the world and ourselves as a family. My daughters love traveling with passion and always want to go to new places, meet new people, try new food.
This blog will record our journey in this new living style and my thoughts around it.
