Meal prep day!

What’s my love language to my loved ones? FOOD! I love cooking for my loved ones, family and good friends. This past week our fridge was bare to the minimum and everyday I had to think what kids will have for lunch and breakfast. So I spent hours in the kitchen to meal prep so we don’t run out of staples. I also did a massive groceries run (200 USD worth which is massive for local standard).

What I made:

  • banana chocolate chips muffins
  • coconut cake
  • 3 loaves of bread, 2 milk bread and 1 whole wheat with sesame seeds
  • vegan shephard pie for me and husband.

Husband was also super busy as driver. Girls had swimming practice but at different times. So he did 3 round trips from 11:30am to 4:30pm, with only 30 min stop for lunch.

When Sofia came back and I showed her proudly all the food I made. She asked me: do you feel good doing it? I said absolutely, I love feeding my family!

I got to bed to read, Britney’s memoire, and saw this. Lizzy made our bed and left this note, which gave me a big smile 🙂

girls had their weekly Netflix time, separately. Sofia with Cookie, with some popcorn chips. What an indulgent moment for her.

I fell asleep 7:51pm! 😀

  1. It is nice to have time to do a bunch of meal prep – especially when you have the house to yourself! I did some meal prep yesterday but it was for my lunches for next week. I made a big sheet pan meal which I am excited to eat this week.

  2. That is one cool cat! I wonder if your daughter was thinking, “Wow, how could someone enjoy spending all day cooking like that?” Or maybe she loved the idea and will be similar when she is older. I love cooking for my family too. Well, usually. Sometimes I love the idea but by the end of the day I am tired and don’t feel like it anymore. That’s when some good meal prep is really helpful, though I don’t do much ahead of time.

  3. Okay, you’re inspiring me to do some cooking today! Sometimes I love it and sometimes I just don’t feel like it. I want to make a dinner that we can eat for tonight and tomorrow, and also something special like cookies or muffins.

    • protein balls
    • pumpkin muffins (easy from a mix)
    • apple crisp

  5. I feel like I have been BARELY cooking anything lately. Between the puppy and my parents here a lot, things have been super chaotic. We have been eating a lot of random meals and/or out or takeout pizza, etc. I am really craving a more regular schedule where I can cook and meal prep a little bit more. Even during my work days, I have been just grabbing things like fruit and a cheese stick or misc items since I’m so busy dealing with Charlie that I don’t have time to really make elaborate meals or salads, etc….. I’m missing it!
