Vegan meals and articles

Eating whole food vegan meal is going strong! I really enjoy my meals and they are usually so simple to make. It will be 3 months mid-October, when I’ll get a blood test to see how it has affected my stats. But personal perception and running performance and recovery are telling me that this way of eating works for me. Samples meals include:

gigantic salad with raw and cooked vegetables, baked tofu and tempeh, and a miso tahini dressing

I pack for lunch to work, always leftovers. This time I had broccoli, tofu, sorghum and tahini dressing

replicating some vegetables dishes we had in Sumba, this one is bean sprouts with chili and tempeh. The one above is eggplant and tofu cooked with soy sauce and Gochujang.

the best of all was this kimchi fried rice with tofu. I had 3 times in 2 weeks. love it! So easy to make and versatile.

Articles that made me reflect about parenting

Why is parenting anyway? Since the outcome is uncertain, the path is unclear, “parenting success” elusive, let’s enjoy the process.

What’s the point of having kids? Big question. I think it’s a divisive topic. People with kids think it’s the best things in the world (most of the parents), people without kids don’t see why they want to give up freedom. I personally belong to the former group. Having kids expands my world, teaches me look the world with a different lens, makes me want to be a better human being.

I had zero extracurricular activities when growing up, we couldn’t afford it, it was not the cultural norm. But now kids have so many options. This article describes well what they are for, and how we should be flexible and adjust to kids needs/interests.

  1. Every time I look at your meal I get inspired! They look SO delicious. And I can see why you’re feeling good- so many nutrients there. I’m intrigued by this fried rice- is it just normal fried rice that you add kimchi to?

    All those articles look great. I’m going back to read them when I have more time. I’m especially interested in the “What’s the point of having kids?” I feel like my life would be so empty without my kids- but my sister has no kids and I know she’s very happy with that decision. So- it can work either way.
