After the successful event yesterday I felt a big weight was lifted out of me. I slept well, the background headache that has been with me the last couple of days was gone, my legs felt fresh although I am on the 4th week of my running streak (more later!), I could feel the breeze as I stepped out of my condo. I didn’t have a plan on how far I’d run today, somewhere between 4-6 miles (the usual), but after the first mile I felt very good and knew I could go for more today. So i did, I completed 10 miles and felt really good.
I like structure in life, in what I do, but sometimes it’s nice to just go with the flow. Let the mind and body take over my rational self. It feels liberating and joyful. I like to practice that with my running, cooking, and reading.
I love the moment when I get home after my run and step into home and have both girls come to me wanting to hug the sweat mess. π I prepared their breakfast and went to take a long cold bath. LOVE QUARANTINE LIFE!
Then I made a green juice before the actual breakfast
I started to work around 9:30am, and only responded to urgent emails as I focused on preparing for the TV interview I was about to have. Once that was done, I went to prepare lunch. The main dish of the day was homemade chicken nugget for Lizzy. She LOVES chicken nuggets. Also made curry chicken with potato and carrot, and 4 vegetable dishes. It seems that GREEN was the colour of the day
the chicken nugget turned out perfect! Even Sofia who doesn’t like chicken said it was super good. It was so easy to make too
Homemade chicken nugget
Ingredients:
- 500g grounded chicken meat (i used drum meat but any would do)
- 1 egg
- S+P
- panko
- oil to drizzle
Method:
- Blend chicken with egg, 1/4 cup of panko and seasoning.
- form nuggets with hand and coated it with panko turning few times
- drizzle the nuggets with oil before baking at 180C for 20 min, turn and bake another 10 min.
After lunch I dressed and put some makeup ready to be interviewed. All went well except that Lizzy entered the room while I was being interviewed asking if she could play a bit longer before quiet time. π I’ll have to re-watch the interview to see how that looked like. hahahah….
The rest of the day was 99% relax! π

This whole post is just impressive! 10 miles like it’s just no big deal…then homemade chicken nuggets for lunch… and a TV interview all in one day! Now I feel super lazy!! π I need to try the homemade nuggets! I think my kids would like those.
Let’s see, my breakfast comfort food would probably be peanut butter toast with banana slices on top. I like oatmeal too with nut butter and blueberries mixed in!
